The 0–4°C range is considered the optimal temperature for storing fresh meat. Within this range:

Inhibits Bacterial Growth: The bacterial growth rate is significantly slower in this range. When combined with the barrier protection of PVDC shrink bags, this helps extend shelf life dramatically.
